If you haven’t started using an Instant Pot yet, now’s the time to start. The amazing meals you can make in it, in such a short time, is well worth the effort of buying one. 

One of my favorite things to make in the Instant Pot is pulled pork, made with pork shoulder because it makes the meat so tender and delicious in a tiny fraction of the time it takes to slow-cook it in the oven or on the stove top. These baby back ribs are no different. Gone are the hours you normally spend cooking ribs. They’re done in just 30 minutes in the Instant Pot.

You’re probably a bit skeptical that cooking ribs this way produces incredibly tender meat that is falling off the bone, like you’d expect from cooking for hours on a bbq pit. Believe me, it does.

The only thing you can’t really have with baked ribs is the delicious char of the grill. While these ribs are baked, we go one step further and broil them to add char to the top.

How to Make Instant Pot BBQ Ribs

Did you know there’s a silver membrane on the back side of a rack of ribs? The membrane needs to be removed to make the best fall-apart meat.

To remove the membrane, turn the ribs over and find the skin at the corner of the meat. If you grab it just right, you should be able to pull it directly away from the back in one piece.

Dry rub

Next, use a tasty dry rub to cover the meat. Here’s the recipe we use:

This is a great rub for ribs, but that’s not where it stops. It’s fantastic on chicken wings, pork chops, and roast chicken.

To cook the ribs in the Instant Pot, you need to place the trivet in the bottom of the inner pot. Fill with 1 cup of water. Then place the dry-rubbed ribs on top of the trivet and lock the top. 

BBQ Ribs

Set the Instant Pot to 30 minutes. It’ll take about 15 minutes to get up to pressure. When the 30 minute cook time is up, carefully do a manual pressure release.

Regular BBQ sauce contains quite a bit of sugar, so it’s important to find a sugar-free BBQ sauce or make your own. I like this recipe for homemade sugar free bbq sauce.

Brush the ribs with bbq sauce and put them on a baking sheet. In order to get the good char on the ribs after they’ve cooked, put them under the broiler for 5-10 minutes, until the sauce is bubbly and slightly charred. If you like these pork ribs be sure to try our bone in pork rib chop recipe.

Equipment

Ingredients

  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp dried rosemary
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • salt and black pepper to taste
  • 1 rack baby back ribs
  • 3/4 cup beef stock
  • 1/2 cup sugar-free BBQ sauce

Instructions

  • Combine the first 5 ingredients, for the dry rub, in a small bowl and stir to combine. Set aside.
  • Carefully remove membrane from back of baby back ribs with a sharp knife, if necessary. Cut the ribs into 3 or 4 equal-sized parts and work the dry rub into each section on both sides. Set aside.
  • Add beef broth or water to Instant Pot and insert the metal rack. Place the seasoned ribs on their sides on top of the insert. (Do not stack them flat on top of each other).
  • Lock the Instant Pot lid into place and turn the pressure valve to “Sealing.” Set the manual setting to high for 30 minutes.
  • Meanwhile, line a large, rimmed baking sheet with parchment paper or a silicon mat and set aside and preheat the broiler to high.
  • Once cooking time is complete, do a quick release by turning the sealing valve to the “Venting” position. Unlock and remove the Instant Pot lid.
  • Transfer ribs to prepared baking sheet. Brush ribs with a generous amount of BBQ sauce on each side.
  • Broil the ribs for 3-5 minutes or until bubbly and beginning to char. Remove from oven and cool slightly. Serve immediately with extra BBQ sauce for dipping.
