A mini waffle maker is one of those priceless tools in a low-carb kitchen. You can make these “white bread” chaffles, along with these easy keto chocolate chaffles and basic keto chaffles with all kinds of different seasonings.
Actually, I have to get this out of the way… these wonder bread waffles aren’t really chaffles at all. Chaffles are cheese waffles, which is how they got their name. These waffles don’t contain cheese, and that’s what makes them so fluffy and light.

Ingredients Needed
Instead of cheese, you make these with:
- Egg
- Almond flour
- Mayonnaise
- Baking powder
- Water
I use almond flour from WholesomeYum, which you can buy directly through that link (it’s our affiliate link). It’s the best almond flour I’ve found. It’s a blanched finely ground almond flour with a great texture and flavor, with just 2 grams or net carbs per serving.
These Wonder Bread Chaffles are great for making sandwiches while on a low-carb or keto diet because they turn out super fluffy and light, just like a slice of white bread. I’m always lamenting that I can’t make sandwiches easily, but with this recipe, I can! Try this keto avocado egg salad with bacon or keto chicken salad both of which make great sandwiches on this wonder bread chaffle.
How to Make Wonder Bread Chaffles
- Preheat the waffle maker.
- Whisk the egg in a bowl until it’s well beaten, then add the almond flour, mayonnaise, baking powder and water. Whisk it again until you have a nice smooth batter.
- Spray the waffle iron with oil or non-stick cooking spray. Pour half the batter into the waffle maker and cook it until the machine clicks to signal its done. Repeat with the second waffle.
The drawback of using this little Dash waffle maker is that it can only cook one at a time. But to make two slices of bread, it only takes about 5 minutes.
You can use a large waffle maker, but I don’t recommend using a Belgium waffle maker, with deep ridges. There’s not enough batter to fill one up, and it will just end up being sort of heavy and dense.
Adding Spices & Seasonings
If you want to add some spices or seasonings to flavor your wonder bread chaffles, that’s always an option. We like to add:
- Everything Bagel seasoning
- Garlic powder
- Dill
- Cajun seasoning
Once you’ve cooked the chaffle, you can then add all kinds of toppings. We like to make sandwiches from our chaffles.
- Tuna melt
- Reuben (roast beef, sauerkraut, thousand island dressing)
- Grilled cheese
- Egg and bacon breakfast sandwich
- Avocado toast
- Pizza snacks
- Open faced roast beef on toast

How healthy are chaffles?
Our wonder bread chaffles are actually pretty healthy. They have just 4 ingredients: egg, mayo, almond flour, and baking powder. That makes them gluten free, very low carb, and low calorie. They also have quite a bit of protein.
Normal Chaffles are made with cheese and egg and that’s all. While it’s not particularly healthy to eat a lot of cheese, the amount of cheese used in the chaffle, which is about 1/2 cup for 2 chaffles, isn’t an unhealthy amount. So they also are quite healthy.
How many carbs are in 2 chaffles?
Each of our chaffles has just 1 net gram of carbs per piece. The serving size is 2 chaffles, which has 2 net grams of carbs. So if you use 2 slices as bread for your breakfast sandwich or lunch sandwich, you will be getting just 2 net grams of carbs. That makes these very low carb and great for a keto diet!
Can you make a chaffle without eggs?
Yes, you can make these chaffles without eggs. Just substitute 1 tablespoon of cream cheese for the egg. They won’t have the quite the same texture, but they are still quite good!
Storing Leftover Wonder Bread Chaffles
If you have any left over, you can store them in the refrigerator in a zip top bag or air tight container for a few days. When you’re ready to use them, just pop them in the toaster or air fryer for a few minutes. This is a great way to have an easy low-carb breakfast plan.
If you want to freeze them, place them on a baking sheet, not touching, and put it in the freezer until they are solid. You can then put them all in a zip top bag and it will be easy to get out just one without them all sticking together.
