  • Coconut Oil This is one of the best oils to use for desserts because it has a slightly sweet flavor and it’s really good for you. Don’t substitute it for anything else.
  • Egg Yolks – the yolks act as a binder for the rest of the ingredients. It won’t hold together without them. I suggest using large eggs.
  • Sugar Substitute – You can choose the sugar substitute that you like best. I like to use allulose because it doesn’t have the cooling effect of erythritol. You can use monk fruit, Swerve, or any one you like. While we tried this recipe with powdered sugar, granulated sugar, and brown sugar we liked the taste and consistency of the brown sugar the best.
  • Butter – I use salted butter because the salt gives a nice boost of flavor to the sweetness.
  • Coconut Flakes – Be sure to get unsweetened coconut flakes and buy only the large flakes that look like they’ve been shaved off the coconut, not the finely shredded kind.
  • Pecans and Walnuts – I like to use both types of nuts for variety, but you can use just one or the other, if you like.
  • Sugar-free chocolate chipsMy favorite brand of sugar free chocolate chips is Lily’s. You can get dark chocolate, milk chocolate, or semi-sweet to suit your mood. Even shake it up and use butterscotch or chocolate mint.

How to Make Keto Magic Cookies

Preheat oven to 350° F (176° C). Line a baking sheet with parchment paper or silicone mat.

In a mixing bowl combine the egg yolks, butter, coconut oil, and sweetener and stir it together until it’s fully incorporated. Next you can add the rest of the ingredients and mix well.

Now here’s the most important part. You must place the cookie dough in the refrigerator for 1 hour for it to set. If you skip this step, it is very likely that your cookies will come out looking like a melted snowman on the baking sheet. They will just collapse and spread. That’s not what you want, so be sure to cool them for at least an hour.

Once set, use a tablespoon or cookie scoop to make small balls of dough and set them on the baking sheet. You can get around 12 cookies from the dough. They will be small, but that’s what keeps them so low in carbs per cookie.

Press the balls down lightly with the back of a spoon to flatten them just a little. Back for 10 minutes or until they start to brown. Let them sit on the baking sheet until they cool. It’s not a good idea to rush into eating these, even though you’re really going to want to. They need to cool completely to set up.

These cookies won’t be around long, yes, they are that tasty. But if you need to, store the leftover cookies in an air tight container for a few days on the counter or refrigerate them for up to a week.
