  • Cajun seasoning – You can use your favorite store brand of Cajun seasoning or make your own. In the recipe below, we give instructions for making your own. To make your own Cajun seasoning, you’ll need paprika, salt garlic powder, ground black pepper, onion powder, oregano, cayenne, and thyme.
  • Sirloin Steak – We use sirloin, which is a lean cut of beef that is high in protein and low in fat. Make sure to trim the fat and cut it into 1-inch pieces.
  • Cooking Oil – I prefer to use olive oil or avocado oil.
  • Butter – Always use salted butter for additional flavor complexity.

How to Make Cajun Steak Bites

You can use your favorite store brand Cajun seasoning, if you want. That makes it really easy to just get the jar out and season the steak. However, I prefer to make my own.

If you’re making your own, you’ll want to mix all of the spices together in a bowl. Add the steak pieces to the bowl and toss to coat the steak with the seasoning. If you have time, allow it to sit for 10-15 minutes to soak up all the flavor.

Heat the oil in a skillet over medium-high heat. Once it’s hot, add the steak and sear it without touching for 3 minutes. Leaving it alone in the pan helps to get a good sear on the steak. If you move it too much, it will become watery and soggy. Totally not what we’re going for here.

After 3 minutes, toss the steak and cook for another 2-3 minutes. Toss again to make sure all sides of the steak are getting browned.

Transfer the steak to a plate. Add the butter to the skillet. Once it’s melted, add the garlic and cook for 30 seconds. Don’t cook any longer than that or the garlic will burn and become bitter.

Add the steak back to the skillet and toss well to coat all the pieces in the butter. Serve it with fresh parsley as garnish.

Additional Helpful Tips

  • Make sure the steak is at room temperature before cooking. This will help it cook evenly and prevent it from getting tough. If you mix the steak with the seasoning and let it sit for 15 minutes, it will be at room temperature at that point.
  • Be sure not to overcrowd the skillet when cooking the steak bites. This will cause the meat to steam instead of sear, and it will not get a nice crust. Cook the steak in batches if necessary.
  • Adjust the amount of Cajun seasoning to your taste. Some Cajun seasoning blends can be quite spicy, so start with less and add more to taste.
